Savoury Oats (Eggs, Asparagus & Mushrooms)

Savoury porridge. Are you feeling disgusted or intrigued? Either way, just for me, please give it a go. You might surprise yourself.

In this porridge bowl we have mushroom, asparagus, salt, black and white pepper, and two runny-yolked eggs. This combination meaning that you have a lovely, balanced breakfast containing low GI carbohydrates in the oats (they digest more slowly, meaning they don’t spike blood sugar and keep you fuller for longer), a source of protein and healthy fats in the eggs, and one of your ‘5 a Day’ in the asparagus and mushrooms- as well as plenty of vitamins and minerals, which the fat in the egg yolk is going to help the body absorb. This is one super-charged breakfast bowl, and a great alternative if you want to change it up a bit from fruit and nut butter on your porridge. My biggest tip with this dish is not to skip the seasoning: white pepper is amazing with eggs, and the salt and pepper combo is going to give the oats some oomph (they smell great when they’re cooking).

Omelettes: 21 Easy Ways

wp-1487345745308.jpgOmelettes are pretty much my go-to quick and easy staple meal. I’m in late: omelette. Not much in the fridge: omelette. Something quick: omelette. Something I can throw into a tub: omelette. You get the gist.

But can’t omelettes tend to get a little bit…boring? Well, yes, if you don’t play with different flavours occasionally. So, below I have 21 omelette ideas for you- vegetarian, pescetarian, and carnivore options, plus some sweet omelettes that make a great weekend brunch.

I’m giving you the basic omelette recipe below as a starting point, and then the quantities of the ingredients you’ll need for each flavour. Simply fold the ingredients up into the middle of the omelette, or whisk them into the eggs- the choice is yours. Basic Omelette:

  • 2-3 large eggs
  • Cooking spray
  • Optional seasonings: salt, white, and black pepper for savoury. Cinnamon and 1.2tsp vanilla essence for sweet. (if any seasonings are specified in a recipe then add them along with these!)

Whisk the eggs and the seasoning together, then spray a pan with cooking oil and place over a medium- high heat. Pour the eggs in and swirl around the pan. Allow to cook for 1-2 minutes, add the filling, fold, and dig in.

Avocado, Mushroom & Mustard French Toast

Here in Yorkshire we actually call this “eggy bread”. But that name never quite fits with a sweet recipe- I can’t imagine my Blueberry Cheesecake French Toast sounding appetising as Blueberry Cheesecake Eggy Bread (either way, it is delicious. Recipe right here: https://ecstaticallyem.wordpress.com/2016/08/19/blueberry-cheesecake-french-toast/). Also, my dad’s cooking has left me with bad associations with the term “eggy bread”. It was always greasy and tasted way too eggy (I would say sorry dad, but you know I know you’re an awful cook). Actually, my dad’s cooking has probably left me scarred for life.

However, a savoury French toast could also lead a double life as an eggy bread. As this is the first savoury French toast I think I’ve shared a recipe for, I wanted to get that random eggy bread/French toast discussion out there.

This is a great savoury recipe, which is easy and filling, and suitable for vegetarians. If you’re a vegan and know of a way to make French toast without egg, then its great for you too. Meat eaters: don’t shy away just because of a lack of meat, this is perfect for a Meatless Monday meal. I actually think you’ll enjoy it a lot. The mustard is completely optional, but I think you need the kick that this and the chilli provides to cut through that creamy avocado.
