9 Lecture Theatre Lunches…

Sometimes at uni lecturers do this really annoying thing where they schedule your lectures back to
back over lunch time. I used to go from 10am through until 2pm with no break, legging it from lecture theatre to lecture theatre.
If you end up in a similar situation you want to take in at least a snack. I used to opt for a nakd bar, meridian bar, or even a Quest bar sometimes- something to keep you going until you are released, and that can be eaten quietly with no refuse other than a wrapper to create clutter. Because although I love snacking on my fruit it can be…

a) noisy to eat when everyone is scribbling away
b) leaves cores/peel that take up room and create a stink.

But what if straight after these lectures you actually have a seminar? And can’t go and eat lunch? You need to grab yourself a seat near the back and quietly eat something a little more substantial. Although I don’t condone eating a full meal in lectures (someone once brought a Domino’s pizza in, and it was the foulest smell I have ever experienced when combined with the heat of summer and nearly two hundred other people), sometimes it needs doing. If you’re a noisy eater though then I’m sorry, but you should disregard all of this advice and for the love of god just wait until after the seminar…

So, here are a handful of lunch ideas that are:

  • Not going to cause a smell in the lecture theatre
  • Aren’t going to make too much noise to eat
  • Can be easily transported into uni

 

1) Banana, Almond Butter & Raspberry Sandwich on Wholemeal
Take two slices of bread. Spread one with almond butter, and the other with crushed raspberries. Lay banana coins onto one slice, and then sandwich together and cut in half.

2) Overnight Oats (breakfast for dinner)
The night before mix 40g oats with 50g Greek yoghurt, and 1/4 cup plant baked milk. Throw in chopped fruit and nuts/nut butter, mix, pop into a tub.

3) Wholemeal Wrap With Lettuce, Tomato, Ham, and Mustard
Spread the wrap with mustard to taste, and then layer on the lettuce, tomato, and ham. Roll, cut in half and pack up. Vegan or Veggie? Substitute the ham for baked tofu!

4) Sweet Potato Wedges + Cheat’s Guacamole (this is only light, so make sure you have something after your lecture/seminar such as fruit or rice cakes with houmous)
Slice a sweet potato into wedges, and microwave until tender. Place into a tub. Mash half an avocado, and beat in black pepper, chilli flakes, and 1 tbsp. thick Greek yoghurt.

5) Pitta stuffed With Chicken, Avocado, Tomato, and Lettuce
Stuff lettuce, tomato, mashed avocado and chicken pieces into a pitta bread. Sorted.

6) Cream Cheese & Smashed Blackberries in an English Muffin
Cut in half one wholemeal English muffin. Spread both sides with cream cheese, and then mash up a good handful of blackberries in a bowl, and spread on top. Sandwich together and go.

7) Fruit & Nut Cous Cous
Prepare one portion of cous cous by pouring the boiling water over it, covering, and leaving for 10 minutes. Fluff it up with a fork. Chop up two prunes, some mango, some walnuts, tomato, cucumber, and bell pepper. Fold through the cous cous and add in some mustard or balsamic vinegar.

8) Quinoa & Baked Tofu Pot
The night before baked one portion of tofu (cut your tofu into cubes, season, and bake for 20 minutes in an oven preheated to 200*c, turning it over half way through the time). Cook your quinoa by bringing 1/2 cup water to the boil and adding 1/4 cup of quinoa. Simmer for 10 minutes. Allow both to cool and store in the fridge. In the morning: Mix the quinoa with the tofu, chopped tomato, cucumber, bell pepper, black pepper, and chilli flakes.

9) Smoothie
If your lecture over lunch is your first of the day, then pack up a smoothie that you can drink quietly wherever you sit. Again make sure you eat something when you get out of your lectures! Simply throw one of these into a flask and go. There are plenty on this blog, but I recommend these in particular:
